Low Calorie Strawberry Parfait
This parfait as a desert is fabulous, I love it when Gina comes over and whips this up. It is simply divine!
1 box of Jello, flavor to match fruit, strawberry for this presentation (or if you're choosing another type of fruit, such as blackberries, raspberries...then get jello flavor to match.)
1 small basket fresh strawberries, chopped fine (or whatever kind of fruit you've chosen.)
1 pint heavy whipping cream
½ cup Splenda sugar substitute
Mix Jello as per package directions, EXCEPT use only half the amount of water.
Place in refrigerator until halfway set.
Meanwhile, whip the whipping cream to a nice thickness and add sugar to the whip. After your whip cream is finished, hold back 1 cup of whip cream to use as topping upon serving.
Once the Jello is partially set, fold in whip cream and strawberries (or berries of your choice)
Pour into individual serving cups/bowls or glasses and place in refrigerator until fully set.
Upon serving, add a dollop of whip cream mixture atop each serving, and a strawberry if desired.
Your guests will love it!
